As important as it is to make delicious pickles, so is the process of canning pickles. In fact, it's a process that ought to be done with a lot of care, precision and diligence. Basically, this is the storage of pickles and it's normally done in cans. When poorly done it can easily lead to pickles getting damaged. Nevertheless, when canning pickles, ensure you do it as per the procedure and your pickles will last even for 2 years. The procedure is as follows.
Firstly, gather all the equipment and utensils required, sterilize them and make sure that they're in good working condition. For pickle barrels and jars, check for any minute cracks, scratches or chipping. Basically, clean the jars in hot soapy water, rinse and then dry them as well as the lids.
The next step is to make the pickles according to your recipe and when they're ready, place inside the jars and use a spoon to remove any air bubbles. Cover the jars with the lids firmly and tightly, and place them in boiling water for about 10 minutes. While heating, you can either use a caner which contains water and the cans are placed in it or a large pot in which the jars can be directly placed.
After this boiling process, allow the jars to cool, dry them and after 12 to 20 hours check to see if their seals are okay. Afterward, store them in a cool, dry and dark place for about a month. At this stage, they're ready for consumption. However, if you open a jar of pickles, store in a refrigerator and consume within an year. Basically when canning of pickles is well done, then they'll last long enough.
