So Many Types of Coatings For Cooking Pans - How Do You Choose?

breadmaker

Single-Layer Non-Stick Coating Single-layer non-stick coating is usually found in cheaper cooking pans and as the name suggests consists of a single layer of non-stick material which has been painted onto the pan. While this may be useful at first there is a danger that this will be easily damaged when you wash your cooking pan, use utensils inside the cooking pan or even after it has been heated and cooled a number of times.

Dual-Layer or Triple Layer Non-Stick Coating Choosing a pan with either dual-layer or triple layer non-stick coating will ensure that the coating is less prone to damage, so the pan will last longer. Often these types of cooking pans are only marginally more expensive than single-layer non-stick coated versions, but may make the pan last years longer. Even with this type of coating there is however still a risk that you can damage the coating by using inappropriate utensils in the cooking pan.

Teflon Teflon is perhaps the most recognised brand of non-stick material which is used in cooking pans. Made by the DuPont company, Teflon is made from a plastic material called polytetrafluoroethylene (PTFE). Teflon is applied to pans slightly differently to some other non-stick coatings, with a triple-layer effect being used. The first coating contains a sticky material to help the Teflon stick, which is followed by a coating of the Teflon itself. To give added protection a third layer is added which contains a number of hardeners mixed with the Teflon. This is designed to help protect the Teflon from being damaged by scratching and normal contact with food. So overall, Teflon is a non-stick coating, but with additional benefits over some of the non-stick coatings used in cheaper cooking pans.

Porcelain Finish Pans A different type of coating which is available on some higher end cooking pans is a porcelain finish, which is completely different to a non-stick coating. Some people prefer this type of coating not only as it is usually more durable than simple non-stick coated pans, but also as there is less concern over safety. Some of the chemicals which are used in other non-stick coatings for frying pans have been recognised as potentially harmful when they are heated over a certain temperature. There is no such concern with porcelain enamelled cooking pans. Instead a substantial layer of porcelain is enamelled over the pan, and this is so thick and durable that there is likely to be little impact even with heavy use. Porcelain itself is naturally non-stick, so there are no chemicals needed in this treatment.

Cooking Tips - Substituting Dehydrated Onions For Fresh Onion

Image : http://www.flickr.com

If a recipe gives you the choice of using dehydrated onion or fresh, it is usually better to use the fresh onion because it has a better flavor. However, dehydrated onion is a handy alternative to fresh onion because it keeps for so long. Dehydrated onions are onions, which have been chopped, and then had their water content removed. They are not as pungent as fresh onions but they are convenient and good if you are traveling or camping.

To substitute dehydrated onions for fresh onions, you need to know that one small fresh onion is equal to one tablespoon of dehydrated onion. If you are making a soup, sauce, stew, meatloaf, crockpot recipe, or casserole, dehydrated onions will absorb the moisture and taste good in the finished recipe, so it is worth keeping a package of dehydrated onions on standby, in case you run out of fresh ones.

You can also rehydrate them in vermouth, sherry or another liquid to give them an extra special flavor if you want to make impressive thanksgiving recipes for example. Another handy tip is that you can find some really excellent gourmet recipes if you do a recipe search by ingredient.

These dried onions are also great if you are making a meal in a hurry and you do not want the mess or the tears, which fresh onions can cause. If you are making a dry recipe, rather than one with lots of liquid, it is better to use fresh onions because dried onion flakes are crispy and hard, rather than soft like fresh onions. Therefore, substituting dried onions for fresh ones can work well but it depends what kind of recipe you are making.

How to Dehydrate Your Own Onions

You can either buy dehydrated onions or make your own. Choose red, yellow, or white onions, depending on the end flavor you want. If you want to make your own, you will need a food dehydrator and two pounds of onions. Peel the onions, and then wash them in warm water. Cut each one into quarter inch thick, half-inch wide squares and arrange them an eighth of an inch apart in your food dehydrator.

Dehydrate the onions at 120 degrees F, or whichever temperature your food dehydrator instruction manual recommends, for about nine hours. To check the onions are totally dry, take a piece out of the food dehydrator and hit it with a rubber mallet or hammer. If it shatters like glass, it is fully dehydrated.

Transfer the dehydrated onions to a Ziploc bag and then put that bag in a paper bag. Cover that bag with one more paper bag and use the mallet to break the onion chunks into smaller pieces. You can make onion powder by grinding the flakes into a powder with a blender or a food processor. Keep your onion flakes or powder in an airtight container or in a Ziploc bag and add them to your favorite recipes.

Preparing and Cooking Eggs

Image : http://www.flickr.com

First, find out how fresh the eggs really are. The freshest ones are the eggs that sink and lie flat on their sides when submerged in cool water. These eggs can be used for any dish. By the time the egg is a week old, the air pocket inside, near the broad end, has expanded so that the broad end tilts up as the egg is submerged in cool water. The yolk and the white inside have begun to separate; these eggs are easier to peel when hard-cooked. A week or two later, the egg's air pocket has expanded enough to cause the broad end of the egg to point straight up when you put the egg in water. By now the egg is runny and should be used in sauces where it doesn't matter if it isn't picture-perfect. After four weeks, the egg will float. Throw it away.

Eggs are easily contaminated with Salmonella microorganisms that can slip through an intact shell. NEVER EAT OR SERVE A DISH OR BEVERAGE MADE WITH RAW FRESH EGGS. SALMONELLA IS DESTROYED BY COOKING EGGS TO AN INTERNAL TEMPERATURE OF 145°F; EGG-MILK DISHES SUCH AS CUSTARDS MUST BE COOKED TO AN INTERNAL TEMPERATURE OF 160°F.

If you separate fresh eggs by hand, wash your hands thoroughly before touching other food, dishes, or cooking tools. When you have finished preparing raw eggs, wash your hands and all utensils thoroughly with soap and hot water. NEVER STIR COOKED EGGS WITH A UTENSIL USED ON RAW EGGS.

When you whip an egg white, you change the structure of its protein molecules which unfold, breaking bonds between atoms on the same molecule and forming new bonds to atoms on adjacent molecules. The result is a network of protein molecules that hardens around air trapped in bubbles in the net. If you beat the whites too long, the foam will turn stiff enough to hold its shape even if you don't cook it, but it will be too stiff to expand naturally if you heat it, as in a souffle. When you do cook properly whipped egg white foam, the hot air inside the bubbles will expand. Ovalbumin, an elastic protein in the white, allows the bubble walls to bulge outward until they are cooked firm and the network is stabilized as a puffy souffle.

The bowl in which you whip the whites should be absolutely free of fat or grease, since the fat molecules will surround the protein molecules in the egg white and keep them from linking up together to form a puffy white foam. Eggs whites will react with metal ions from the surface of an aluminum bowl to form dark particles that discolor the egg-white foam. You can whip eggs successfully in an enamel or glass bowl, but they will do best in a copper bowl because copper ions bind to the egg and stabilize the foam.

George Foreman Champ Grill - The Perfect Solution For Cooking Scrumptious Dinners For 1 Or 2 People

Image : http://www.flickr.com

There is an endless amount of tasty grilled foods you can cook using a George Foreman grill. To cook a small amount of food like one hamburger or one chicken leg is just too over the top using the normal size foreman grills. The smaller old grills however, were still excessively large to prepare just for a single person so more energy, water, space and time is wasted so they produced the champ grill to address this problem since it is a smaller grill suitable to making it ideal for 1 to 2 individuals.

At only 36 inches, the champ grill is a very small but can still still make two huge burger patties, two pork chops or one chicken thigh. The grill has also inherited its trademarked inclined construction to cook all of foods healthier. As a result, the grease and fat that excretes off from the food will flow away through the plate and onto a drip tray. To offer even heat dispersion and faster temperature recovery time, the heating elements are integrated to this grill to evenly distribute heat from the center to all sides of the surface.

This feature uses less energy and but at the same time faster and shorter time is required to make the food. Accessories like the drip tray and spatula are given to assist in collecting the grease and fat that drains off for a no-fuss food removal. The grill plates should be cleaned using a moist cloth while the accessories are safe to put into the dishwasher so clean-up is a lot faster.
