Quinoa. It's a super yummy, high protein, high fiber, low glycimic index carbohydrate source. It is found in the high altitudes of South America, and in fact the great civilizations in that area were fed by it. It is tasty, very nutritious, and is something special you can feed to your guests. It goes well with almost any kind of vegetable and meat dish.

Quinoa is, surprisingly, a complete protein food. Almost like meat. It has all the essential amino acids. It grows only above 3,000m altitude in dryer areas of South America (that kind of explains the high cost!)

Quinoa is so nutritious that the South American Indians called it the "Mother Grain"... it's that good.

I'm eating some immediately after I write this.

Here in Singapore where I live, quinoa is available in health food stores and costs about 7SGD (about 4 USD) per 500g. The 500g really expands and can last many meals. This makes quinoa more expensive than rice, but still not out of budget for most people.

Cooking Instructions

1. First figure out how much quinoa you are cooking in terms of "cups" or volume. (easy just pour it into cups and count!)

2. Then boil 2x as many cups of water as you have quinoa. E.g. to cook 3 cups quinoa, boil 6 cups water.

3. Once the water is boiling, with bubbles and steam! Add in the quinoa and turn the heat to low.

4. Let is cook at low heat for 15 min (or thereabout) till the water has been totally absorbed.

5. Serve to people you love because it's good for them!

6. You can refrigerate the remainder, it stores well.

It is amazing how beautifully golden and evenly cooked my breads are now. Before, in a gas oven, they came out nice, but now they rise better. Breads baked in the convection oven even have a quality taste, since the strong heat carmelizes the exterior, they have a slightly nutty and sweet flavor. It's because the oven strongly circulates the air around the inside, distributing the heat more efficiently to the food.

Some foods aren't meant to be made using convection style, due to the air movement inside the oven. Making souffles, meringues or anything delicate is discouraged. Also, if you work with parchment, anchor it down in the oven to keep it from blowing all over the place. But, in general, nearly everything can be made in the oven, from cookies and cakes to breads of many kinds. The breadmaker in my unit is fantastic. Just load the included container with the ingredients, and the oven does the rest: mixing, poofing and baking. When it is finished, it just sounds a chime. Pies bake perfectly, my oven has a round baking rack for pizzas and pies, that rotates as it cooks. The oven also makes great roasts and includes both a vertical and horizontal spit to cook with. With convection, the possibilities are nearly endless.

When converting your recipes to convection cooking, the experts say to subtract 25 degrees from the recipe's given setting. Convection ovens cook faster, so also decrease the cooking time by about 25% as well. Multiple racks of cookies can be baked at the same time with superior results to the less evenly cooked multiple batches in a regular oven. That is why most bakeries and restaurants use convection ovens, because they can bake in quantity without sacrificing quality of the finished product.

Don't be afraid to switch to convection cooking. Once you make the change, you will be glad that you did. I know I am. After seeing others use them and tasting their artisan breads, I decided to get my own. If you are a serious bread baker or cook, this oven will be of great use to you. That is why cooking schools use and prefer them to conventional ovens. Give it a try, you won't be disappointed. If anything, you'll be finding excuses to do more baking. Your family will most definitely approve.

- Elenski but - Dry-cured ham, traditionally from Elena in northern Bulgaria.

- Banitsa - A light baked savory pastry made with eggs and sirene.

- Sarma - A rolled leaf, filled with a spiced mixture of minced meat, rice and finely chopped onions.

- Popara - A meal made from dry, perhaps slightly stale bread. The bread is cooked with milk, tea or water, a small amount of butter and sugar, and either kajmak (a type of clotted cream) or sirene.

- Gyuvetch - A casserole made using diced beef, peppers, onions, tomatoes, eggplant, and okra.

- Tsarska turshiya - Pickled vegetables; cauliflower with carrots, celery and red peppers.

- Selska turshiya - Pickled vegetables; cauliflower with green onions, geen tomatoes, cabbage, carrots and celery.

As well as savory dishes, Bulgaria is also home to many excellent desserts. These include:

- Garash - A walnut cake, frosted with cream and bitter chocolate, then covered with chocolate icing.

- Halva - A sweet made using sesame-seed or sunflower-seed tahini. There is also a variant made using semolina, and another variety (known as "white halva") made from sugar which is traditionally eaten just before Lent.
